Lentil Soup (Fakes x Minestrone hybrid)

Prep: 5-10 mins
Cook: 40 mins
Serves: 3-4

Ingredients:
  • 1 Tbsp olive oil
  • 1/2 Tsp coriander
  • 1/2 Tsp cumin
  • 1/2 Tsp salt
  • 1/4 Cup red wine
  • 1/2 Tsp dried parsley
  • 1 Cup whole green lentils
  • 2-3 Garlic cloves
  • 1/2 Large onion
  • 1 Small zucchini
  • 2 Celery ribs
  • 1 Carrot
  • 1/2 Cup red cabbage
  • 1 Can unsalted diced tomatoes
  • 1 Large or 2 small bay leaves
  • 4-6 Cups vegetable stock
Garnish:
  • 1 Tbsp pecorino/parmesan cheese 
  • Fresh ground pepper
  • Lemon wedge
